Cilantro Lime Salad Dressing
A good dressing can make or break a salad, and in my opinion, this Cilantro Lime Salad Dressing definitely MAKES this salad! It’s so flavorful and delicious and is also able to be used for much more than simply a dressing – it can be used to season veggies, fish, meat, etc.! Let’s dive in!
Cilantro Lime Salad Dressing Breakdown!
As I mentioned, this Cilantro Lime Salad Dressing is to die for, but it’s also super simple as well! Fare warning – I would double this batch because it’s just THAT good, and so refreshing to have on hand, especially in the summer!
- Base: The base for this dressing is the cilantro of course, and as always – get organic if possible! I like to use a giant bunch with the stems removed. Like most herbs, cilantro is packed with antioxidants AND it also helps balance your blood sugar, which we love!
- Healthy Fat: For the fat in this dressing, I chose to use Extra Virgin Olive Oil, which is an amazing food! Don’t ever be scared of healthy fats, they’re SO good for you and super nourishing. It helps you glow from the inside out!
- Acidity: For the acidity in this dressing, I did a combination of white wine vinegar and of course lime juice. You always want to have an even ratio of fat to acid in a salad dressing. I love the white wine vinegar again, because it helps you balance your blood sugar!
- Sweetness: Of course we had to add in just a touch of sweetness to the dressing. I chose to use a touch of monk fruit, which has a zero glycemic index, which means it doesn’t spike your blood sugar as typical refined white sugar does. Love!

Cilantro Lime Salad Dressing Specifics
Based off of 5 servings, this dressing comes out to 206 calories per serving, 22g healthy fat, 2g carbs, 0g fiber and 0g protein. It’s such an amazing add to any sort of salad! I chose to top it over a mix of kale and arugula with some Palmini Noodles (which you can find with my pantry staples), tomato and red onion! It was DELISH!

- 1 bunch cilantro, stems removed
- 2 cloves garlic
- 1 lime, juiced
- 1 tsp red pepper flakes
- 1/2 c extra virgin olive oil
- 1/4 c white wine vinegar
- 1/2 tbsp monk fruit sweetener
- Salt to taste
Instructions
Dressing Time!
- Add all of the ingredients of the dressing to a blender or food processor.
- Blend until well combined. Enjoy!
